Zucchini Fritters.
This is a staple Italian recipe that I grew up having all throughout my life. My grandparents used to have a huge garden and the zucchini definitely thrived. I hope you enjoy this recipe as much as I do.

  • 1 Small Frying Pan


  • 2 medium Zucchinis grated
  • 1 Clove of Garlic minced
  • 1 tsp Baking Powder
  • 3 tbsp All-Purpose Flour
  • 1 handful Fresh Italian Parsley chopped
  • 1 handful Fresh Basil torn
  • 1/3 cup Parmigiana Reggiano grated
  • 1 Large Egg
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Olive Oil (or any oil you wish) for frying
  • Zucchini Flowers (optional)


Fritter Assembly

  • Start by grating the zucchini. Place in a paper towel and squeeze out some of the liquid. Add the zucchini to a bowl and crack in one egg. Lightly mix and then add in the baking powder and flour. Next add the chopped garlic and herbs and mix together.
  • Lastly, add in parmigiano, salt and pepper. Once all the ingredients are in the bowl mix well until combined. Your mix should look pasty and thick like pancake batter.

Frying the Fritters

  • Heat up pan on medium and add the oil. Scoop a tablespoon of filling into the oil and fry for 2-3 minutes a side. Dab the excess oil on a paper towel. Serve warm.
